Coated with white mold, creamy and melting inside, at its optimal stage of ripening, this rich in nuances cheese take us to the flocks of high mountains and grazing cattle where the raw material to make it is obtained.

Light yellow cut and slightly moist eyes small. The rind is white and velvety texture, caused by mold that covers it.

Peñamellera Cooperative began producing " Cueva de Llonin " in 2000. While initially production process is virtually identical to that of traditional cheese of Peñamellera – pasteurised Cow's milk, curdle for about 30 mins, break curd to get small grains, drain whey off , brine salted and molded - subsequent maturation process gives similar sensory characteristics both in appearance and in texture, to French Brie or Cammembert cheese.
